Vegan Roasted Potato Salad


Summer is all about a great barbecue, and what's a BBQ without potato salad? 

If you're vegan like me, you might be feeling quite out of place at some summer gatherings what with all the meat and dairy being passed around. That's where this simple recipe comes in!

I've served this to non-vegans and they can't even tell the difference :)

First, start with some clean potatoes. I prefer red, but you can use any spud type you like. Cut them up into little bite-sized pieces and put them in a bowl with some extra virgin olive oil and salt & pepper to taste. 


Throw them in the oven at 350° F for about an hour until they're nice and crispy.



Let your newly roasted potatoes cool for a few minutes, then toss them with a few tablespoons of vegan mayonnaise and a tablespoon of sweet pickle relish.


Voila! You've now created a delicious treat that everyone can enjoy!
