These deliciously moist and chewy cookies were adapted from a recipe by Chocolate Covered Katie at chocolatecoveredkatie.com
Here's what you'll need:
1/2 Cup of Natural Almond Butter
1/2 Cup (heaping) of Quick Cook Oats
3/4 teaspoon of Baking Soda
1 Squirt of Skinnygirl Monk Fruit Sweetener
2 Tablespoons of Unsweetened Natural Applesauce
1/2 Cup of Raisins
Pinch of Cinnamon
1 teaspoon of Vanilla Extract
(Chocolate Chips optional)
After you've mixed all the ingredients in a bowl, roll out the cookie dough into balls and place on a parchment-lined baking sheet.
Have your oven preheated to 350*F and bake for about 8 minutes. The cookies won't look fully cooked, but once they are cooled for another 8 minutes, they will look and taste like perfect chewy oatmeal cookies!
